6. Chicken Teriyaki
To cut down prep time with this dish we use a prepared teriyaki sauce…and it ends up tasting really great!
Ingredients:
1-2c. rice
2-3 chicken breasts cooked & diced
broccoli (fresh or frozen)
prepared teriyaki sauce
Prep time: 20 min Cook time: 20 min
Preparation: Cook rice according to package instructions. Steam broccoli in microwave. Assemble bowls with rice, broccoli and chicken and top with teriyaki sauce.
Tips: All prepared teriyaki sauces are NOT created equal! Most are really thin, however, the La Choy pictured above (I’ve only found it at Walmart) is a nice thick sauce and tastes great (as far as prepared sauces go :).
I also like to prepare pans of chicken ahead of time and put them in the freezer. Just dice your fresh chicken, put it in a foil pan with a little teriyaki sauce then cover with two layers of aluminum foil and freeze. When you are ready to use, bake in oven at 350 for one hour…you’ll have perfect, tender chicken every time!
7. Chicken Tacos
I could probably eat these three nights a week :) The salsa mixed in with the chicken really gives it great flavor.
Ingredients:
1 bag frozen chicken or 6 small to medium fresh chicken breasts
1 jar salsa
1 package taco seasoning
tortillas
your favorite taco toppings
Prep time: 15 min Cook time: 4-6 hours on low in a crockpot
Tips: I usually use a bag of frozen chicken. I put the whole bag in the crock pot and cook for about four hours on low until it is cooked through. Then I shred the chicken and put it back int the crockpot with the salsa and taco seasoning.

8. 3 Cheese Chicken Alfredo Bake
Not healthy at all, but incredibly good and quick to put together (also freezes well). The only drawback to this recipe is that the cost of the ingredients adds up quickly, but it makes a HUGE pan.
Ingredients:
1 (16 ounce) box Penne pasta noodles
2 (10 ounce) containers Alfredo sauce
1 cup sour cream
1 (15 ounce) container Ricotta cheese
2 cloves of garlic, minced (I use jarred)
2 cups cooked, diced chicken
1/4 cup grated Parmesan cheese
2 teaspoons dried parsley
1 teaspoon Italian seasoning
2 cups shredded Mozzarella cheese
Prep time: 20 min Cook time: 30 min
Tips: One of the few recipes I’ve made no adjustments to even after making it several times, perfect as is!

9. Speedy Firecracker Chicken
If you like a little spice, you will LOVE this! (You’ll also love how quickly it comes together :) We also make it with diced, unbreaded chicken and it is equally as good, it just takes a little longer to prepare.
Ingredients:
1½-2 pounds frozen popcorn chicken
⅓ cup hot sauce (I use Frank’s brand for hot wings since it is thicker)
1 cup packed light brown sugar
1 tablespoon water
2 teaspoons apple cider vinegar
½ teaspoon salt
1-2c. prepared rice
Optional:
side of broccoli
Prep time: 5 min Cook time: 30-60 min
Tips: I usually bake it at 350 for 30 minutes instead of the suggested 325 for an hour and it turns out great :)

10. Oven Fried Parmesan Chicken
Every time I make this my husband asks why I don’t make it more often, and I say, “I don’t know, I guess I forgot…but please remind me, this is SO good!”
Ingredients:
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp. Italian seasoned dry bread crumbs
Prep time: 10 min Cook time: 30 min
Tips: Make sure you let it bake until it is nice and brown on the outside like the picture. I generally use Panko bread crumbs and add a little Italian seasoning on top, either works :)
